Food Defense Coordinator Seminar

Examines issues and challenges that might arise at a food facility from intentional tampering, terrorism or sabotage.

Participants learn to develop and implement a food defense program that prepares them to handle intentional contamination at their facility.

Instructors examine challenges that might arise at a food facility from intentional tampering, terrorism, or sabotage. The seminar includes hands-on workshops that provide a framework for solid food defense planning that can be tailored to individual facilities.

Issues addressed at the seminar relate directly to new customer requirements, the Food Safety Modernization Act, and audit schemes like GFSI.

Participants receive a complimentary copy of The AIB Guide to Food Defense.
Participants can also become an AIB Certified Food Defense Coordinator by completing the online verification test with a score of 80% or higher within 30 days of the seminar.

Who should attend

Those persons assigned the responsibility to develop, implement, and manage a food defense program for a facility or corporation. The course is targeted to those individuals that do not have previous security, food defense, or law enforcement backgrounds.

Learning objectives

  • Define food defense and differentiate between food defense and food safety.
  • Describe the requirements of the Bioterrorism Act, CTPAT, FDA security guidelines, and FSMA.
  • Outline the elements of a food defense team, plan and policies and apply those elements in writing examples of food defense policies.
  • Complete a vulnerability assessment and choose appropriate countermeasures to mitigate the risk identified.
  • Devise a crisis management program and create crisis scenarios that can be tested at their facilities.
  • Define specific measures necessary for various types of emergency evacuations.
  • Compare various physical security counter measures available and choose appropriate measures to mitigate risks identified at their facilities.
  • Assess their current employee training program and prepare training sessions for employees on the topic of food defense.
  • Characterize various types of workplace violence and employ various techniques to deal with violence in the workplace.
  • Differentiate between a traceability and recall program and modify traditional recall programs to deal with intentional contamination events.

    Prerequisites

    Students should have a general understanding of at least one sector of the food industry from agricultural production to production to retail.

    Team of Speakers

    • Lance Reeve - Director of Food Defense (AIB) - As the Director of Food Defense for AIB International, Mr. Reeve has specialized in food safety and food defense training and program development. He co-developed the food defense seminars and products that AIB International provides in the United States and Internationally. During his work on food defense projects, Mr. Reeve has had the opportunity to work in partnership with and attend training sessions with security professionals that service the food industry.

      Mr. Reeve has also been very active with the food safety seminars and in-plant training offered by AIB International. He has authored articles, technical bulletins, and a book on food safety and defense topics. Mr. Reeve is a certified HACCP instructor through the International HACCP Alliance.


      Prior to his role as Director of Food Defense, Mr. Reeve was the Project Coordinator. He started his career with AIB International as a Food Safety Auditor in 1994. He is a graduate of the University of Wisconsin - Eau Claire with a degree in Environmental and Public Health.


    • Rod Wheeler - Homeland Security, Food and Facility Defense Specialist- Mr. Wheeler has a BA in criminology and criminal justice from Ohio State University and an MA in administration from American University in Washington D.C. As a former homicide detective, he is recognized as a “leading authority” on law enforcement issues and has been asked to serve as keynote speaker to many organizations on crime related matters. He is an active member of the American Society of Criminal Justice, The American Society of Law Enforcement Trainers, and the recent past Chairman of the Food and Agricultural Security Council of the American Society of Industrial Security (ASIS). His responsibilities are to assist food processing and manufacturing corporations with the development and implementation of their food defense plans, procedures and guidelines.
